No bake Vegan Pumpkin Pie 🥧

What is Agar Agar?

🧡RECIPE🧡

★ Healthy, Vegan & Gluten-Free Dessert ★

Ready in: 60 minutes

Serves: 8 -10 servings

[Ingredients]

★Crust★

1 cup pitted dates

1 cup pecan flour ( grinded pecans)

1/2 cup gluten-free oats

2 tbsp coconut oil melted

½ tsp pumpkin spice (optional)

★Pumpkin Layer★

1 cup coconut milk from a can

1 cup pumpkin puree ( homemade or store-bought)

6 tbsp coconut sugar

3/4 tsp Agar Agar LIVING JIN official

1 tsp tapioca starch

1 tsp pumpkin spice

★Pumpkin Jelly Layer★

1 tbsp pumpkin puree

2/ 3 cup water

1 tsp Agar Agar LIVING JIN official

1 tbsp coconut sugar

★Pumpkin & Leaves Jelly Decorations★

1/2 cup water

1 tsp Agar Agar LIVING JIN official

½ tsp monk fruit sweetener (optional)

1 tsp turmeric powder

[Preparation]

- Using a food processor add the ingredients for the crust in order and

blend and pulse for a few minutes to create a gooey texture kind of crust.

- Spread the crust mixture in a pie pan.

- In a separate pan cook on low heat the ingredients for the pumpkin layer in

the order listed in the ingredients list.

- Take off heat and pour into the pie crust. Spread even and set aside.

- In a clean bowl mix the ingredients for the pumpkin jelly layer and transfer

to a pot to boil for 2 to 3 min on low-medium heat.

- Pour this jelly mixture on top of the pumpkin layer. Set in the fridge while

working on the decorations.

- In a glass bowl add the ingredients in order for creating the pumpkin &

leaves jelly decorations. Transfer into a pot and bring to a boil for 2 to 3

min on low to medium heat.

- Pour this jelly mixture into molds and set in the fridge for at least 1/2

hour. ( bring your kids to help you with this step, they will love it )

- Take out the pie and decorations and start decorating your pie.
